Ube has moved far beyond the traditional Filipino desserts where it has long been familiar. Its distinctive purple color and flavor have found their way into cakes, pastries, drinks, and other products in markets outside the Philippines, turning the humble purple yam into one of the country’s increasingly recognizable food exports.
But as international interest in ube continues to grow, Philippine researchers are looking at a question that goes beyond its popularity: which varieties can help the country produce more ube while maintaining the qualities that make it desirable to consumers?
Varied Goodness
Researchers from the University of the Philippines Los BaƱos (UPLB) have identified 10 promising ube varieties after examining 188 greater yam (Dioscorea alata) accessions collected from farms and gene banks across the country. The varieties showed different strengths in yield, color, flavor, aroma, pigmentation, and genetic characteristics that could be useful for future breeding and commercial production.
The research comes at a time when ube is gaining greater attention in international food markets. What was once primarily associated with Filipino dishes and desserts is increasingly appearing in products overseas, creating new opportunities for Philippine farmers and food producers.
The Department of Agriculture has described the crop as more than a traditional ingredient, pointing to its potential as a high-value agricultural commodity. But turning that growing popularity into a sustainable industry requires more than consumers wanting more ube.
It requires the Philippines to consistently produce enough of it.
More of the Trending Crop
One of the challenges is that Philippine ube is not a single, uniform crop. Researchers found considerable diversity among the varieties they studied, with differences in flesh color, flavor, aroma, yield, and other characteristics. Some varieties may be more useful for farmers because of their productivity, while others may be more attractive to processors and consumers because of their taste or appearance.
Among the varieties studied, Villasis 2 stood out for its yield, producing more than 60 tons per hectare. Kinampay, meanwhile, continued to distinguish itself for its flavor, highlighting how different varieties can offer different advantages depending on what the industry needs.
That distinction could become increasingly important as the Philippine ube industry tries to move from a food trend to a long-term agricultural opportunity.
For international buyers, consistency matters. A processor or food manufacturer looking for Philippine ube needs to know what it is purchasing and whether future supplies will have comparable characteristics in terms of color, flavor, and texture.
This is where the scientific side of the research becomes particularly important.
UPLB researchers used thousands of genetic markers to create DNA profiles of Philippine ube accessions. Such genetic information can help distinguish varieties, preserve valuable genetic material, and support future systems for varietal identification and certification.
For an emerging export industry, that kind of identification could help protect the authenticity of Philippine ube while giving farmers, processors, and overseas buyers greater confidence in the crop.
The research also gives plant breeders a wider pool of characteristics to work with. Instead of looking for one variety that is perfect in every way, scientists can study different strengths and potentially combine desirable traits through breeding programs.
The effort is happening alongside broader government initiatives to expand Philippine ube production. In June, the Department of Agriculture’s Bureau of Plant Industry and the Philippine Root Crop Research and Training Center distributed more than 60,000 ube planting materials to farmers in Leyte and Bohol, reaching around 900 farmers organized into more than 60 groups.
The government has also been working on an export-oriented roadmap for the industry, including proposed propagation sites, processing hubs, improved varieties, standardized color classification, and stronger branding for Philippine ube.
These efforts point to a larger shift in how ube is being viewed.
Instead of treating it only as a beloved ingredient in Filipino cuisine, the crop is increasingly being considered as a potential agricultural industry that could connect farmers to growing domestic and international demand.
Popularity Comes with Pressure
A food trend can spread quickly, but agricultural production cannot always keep up at the same pace. Farmers need quality planting materials, suitable varieties, technical support, reliable markets, and enough production capacity to meet demand. Without these, the popularity of ube could remain largely a consumer trend rather than develop into a stable source of income for Philippine producers.
The challenge is particularly significant because the Philippines is competing in a regional agricultural market where other countries are also developing their own food and export industries. The Department of Agriculture has emphasized the need for stronger coordination across the Philippine ube sector as the country seeks to compete internationally.
That makes the work happening in UPLB more than a search for a better-looking or better-tasting yam.
The researchers are helping identify which parts of the country’s existing ube diversity could be most useful for the industry’s future. Some varieties may help increase production, while others could contribute qualities that make Philippine ube more attractive to processors and consumers.
The Next Big Thing, Ube!
The Philippines does not have to invent a new crop to participate in the global demand for ube. The crop is already deeply rooted in the country’s food culture and agricultural communities. What researchers and industry stakeholders are now trying to do is determine how to make the most of what the country already has.
From the purple desserts that first introduced many international consumers to ube to the laboratories studying its genetic diversity, the crop is entering a new chapter.
The next big step may not be another viral ube product or another international food trend. It may be finding the varieties, farming systems, and industry support that allow Philippine ube to remain in demand long after the latest food craze has passed.
